Choof down to the shops, get a serve of hot chips… chicken salt? Always. Maybe a corn jack or a crab stick? Go on, you deserve it. You know what’s coming. We always make a little portion of Chardy/Savagnin because, you know, life is for living. Sit the fuck down and RELAX. Open this, have some salty fired stuff and think about nothing.
A barrel each of Chardonnay and Savagnin. Handpicked, direct pressed, settled overnight and racked to barrel for fermentation and elevage. 20 months in barrel and a further year in tank. If you are familiar with the 2021 version of this wine - which I love - this has the weight of that, but the palate is kinda glyceral, rather than the saline of yore. Alicia reckons it’s salivating, have to agree. The Savagnin rounds out the back palate with a coating weight. It’s got just the right amount of wild to dial in the senses. And like that, you just ate whole bag of chips.

Manufacturing

All Borachio wines are made from organic (non certified) grapes. Made and bottled with care at our little winery.
There are no chemical adjustments made nor preservatives added.
Bottled in an Australian made lightweight bottle, sealed with a Vinc+ micro-agglomerate cork.
The cartons we use are manufactured by a local, family owned business.
Labels are printed by a local, independent business.
Please recycle the glass, carton, divider and crown seal.
